It all began in 1927 when Eugenio Sernas, Sr. started a fortuitous agave crop in Oaxaca’s Matatlan. The traditional method of production came under fire during the 1970s when industrial processes began to displace artisanal values in the commercial place. Resisting this, Juan Sernas and other producers held a strike along Iturbide Road which led to the current regime of strict standards around purity and provenance that guarantees the quality of mezcal on shelves today. Under the leadership of Eugenio Sernas Diaz, the tradition continues at Victorioso and in its branded products including Espadin, Tobala, Cuishe, and Ensamble.
Victorioso Espadin (A. Angustifolia) Mezcal is crafted exclusively from mature agave and, as a result, bears a sweet, complex flavor. Aged 12 years at a minimum, Espadin contains notes of orange peel, chamomile, honey, and melon with an aroma reminiscent of roasted fruits and agave and with an almost caramel, dulce de leche-esque undertone. Hailing from the Santiago Matatlán region, Espadin is perfect for connoisseurs that enjoy joven style and the sweetness traditionally associated with agave. Espadin Agave, also known as Agave Angustifolia, also has the distinction of being the most common market agave and thus typical aging is around 6 to 8 years due to its popularity, making the Espadin (A. Angustifolia) Mezcal particularly unique for its lengthy process.
Taking up to 15 years, the Victorioso Tobala (A. Potatorum) Mezcal is revered for its dynamic flavor. Silky smooth textures with floral notes and essences of herbs, the Tobala (A. Potatorum) Mezcal contains a tropical admixture of coconut, honey, pineapple, and papaya. Crafted in the Santiago Matatlán region, aromas include the aforementioned tropical hints as well as traces of mamey, Cempasúchitl flower, rosemary, and fresh green grass. Flavor notes also include banana, nanche, cajeta, peanut shell, and cardamom. A rare variety that cannot be easily reproduced without the assistance of wildlife, the relatively scarce nature of Tobala makes it a coveted item among mezcal aficionados.
Coming in with a more vegetal flavor profile, the Victorioso Cuishe (A. Karwinskii) Mezcal also hails from Santiago Matatlán and is described as a piquant, spicy profile with aromas of green prickly pear, lemon peel, jasmine, honey, peppermint, wet mud, copal, and cashews and flavors such as chico sapote, green grapes, cajeta, rosemary, toasted walnuts, mint, anise, and aromatic herbs. Rare and difficult to produce, Cuishe is a rarefied spirit for palettes that seek the new, extraordinary, and unique.
